1. Producing process of native tapioca starch:
The method of producing tapioca starch includes numerous small steps, but generally the process comprises of 6 expansive steps
Firstly, cassava tubers are blended and washed, cut and ground
Secondly, discharge crushed cassava into a starch extractor to extricate starch milk.
Thirdly, starch milk will be made to separate into two layers, those are fluid drifting on the surface and thick starch solution.

2. Methods to modify tapioca starch:
We have 2 kinds of modified tapioca starch methods: those are physical and chemical method.
– Physical method: It is a method of pure starch denaturation using physical forces such as pressing, compressing and gelatinizing effect on starch to change some of its properties to suit the application, Modified starch products of this method are gelatinized starch, moist heat-treated starch.
– Chemical method: A method of using the necessary chemicals to change the properties of starch, the main product of the chemical denaturation method is the starch to treat acid, ether, starch and estehydrate, phosphate.
In addition, these are chemical methods in starch denaturation technology:

+ Transformations by creating horizontal links
+ Transfiguration by adding phosphate groups
